How to find missing Squirrels?: In-game the Squirrels will appear simply as big-headed Squirrels hiding in the game’s levels that you can pick up to collect by driving over it. It can be confirmed as being Squirrels simply by the on-screen text that follows and indicates the total you collected out of the (now) 76 Squirrels in the game.

Does the game save each Squirrels you collect?: Yes, the game will automatically save the Squirrels you just collected if you picked up the Squirrel. After that you can quit the level you’re on and still retain your collectibles progress.
